My husband is a great cook, more like chef actually. Last night we had Sesame Chicken, pan roasted potatoes (in EVOO and shallots) and steamed artichokes with melted butter. Talk about restaurant quality food. Oh my!
I didn't take a picture of the chicken, and I should have. You could see the sesame seeds on the chicken, they were toasted to perfection along with the chicken. The pan roasted potatoes were delicious and so were the artichokes, especially dipped in melted, salted butter - yum.
Sushi and other delicious meals
This is my food diary. Since I was diagnosed with a gallstone in January of this year (however, I'm not entirely convinced that's true) I had to drastically change my diet. I now eat sushi (Nigiri is my favorite), small portions of fresh or steamed veggies and no animal fat. Now I really have to stay away from certain foods.

Chili Sauce covered Pot Stickers

My husband made some delicious chili sauce pot stickers the other night. They were really good and looked almost like chicken wings. Here is a stock photo since we devoured them that night and I neglected to take a picture.
The ingredients inside were chopped lettuce and ground chicken with garlic and ginger. Plus green onions and of course, chili sauce!

Bulgogi Beef and Onions over Rice

My husband and I are continuing to eat healthy and last night we had beef and onions. Not the usual beef and onions, but Bulgogi Beef and Onions. How is this different than regular beef and onions you may ask? Well, the Bulgogi beef is thinly sliced (like wafers) and marinated in Korean BBQ Sauce in the refrigerator for at least two hours, less if you just can't wait! It turned out so delicious that we are having left-overs tonight.
Oops, I lied - but not on purpose! I really thought we'd eat left-overs. Ended up eating shu-mai and pot stickers. They were delicious and plenty for us to eat, no need to gorge ourselves.

The reason behind why I am now eating sushi and healthier foods
For those of you who don't know, I recently (just over a month ago) had to completely revamp my diet. And here all this time, I thought I'd been doing really well eating...ha! I was to find out that was not the case on January 23rd when I became ill at work, in pain and eventually throwing up in the nurses' office in front of my principal, assistant principal and both nurses on duty. Embarrassing , to say the least!
Anyway, after endless tests and three and a half days in the hospital, it was declared that I'd had a blockage (gallstone) and that the stone had passed. I was fortunate enough to not have had any kind of surgical intervention (which most likely would have resulted in a longer hospital stay) and I was able to go home Monday and back to work the very next day. Needless to say I was exhausted, yeah, hospital stays tend to do that to you.
You think you'll get plenty of rest, but that never really happens. The sad thing about all of this is that I was not able to see my daughter (she's under 12 years of age and RSV was running rampant - yeah, right, bullsh** if you ask me) and my husband did not come by to visit either as we had no one, and I mean no one who could watch her for a couple of hours. Oh well, I'm so used to not having anyone come visit me - that's the sad part...none of my co-workers came by to check on me, although I did get a couple of calls from the assistant principal and the principal saying that I was on their minds and that I was to get well soon and return to work when I felt up to it.
My co-workers were surprised at my early return to work, but understood why. I love teaching the kids to read. It's become my passion.

Black & White Sushi Night

While the title may sound like I'll be showing pictures of Sushi in black & white, you will soon discover, when you look at the pictures, that this is not the case. I titled my blog "Black & White Sushi Night" because tonight, on St. Patrick's Day, instead of the usual Corned Beef & Cabbage affair that most people would partake, my husband and I ate Sushi instead. He made a sushi roll with Rice Paper (for me since I'm not sure I can digest seaweed - hence the 'white') and a sushi roll with Seaweed for himself. We also had Nigiri sushi - which, in case you didn't know, is raw fish and rice only - my fave. Tonight's ingredients in the Sushi rolls included rice, raw tuna, avocado, cucumber, carrot and cream cheese. We also had a pickled ginger, soy sauce and wasabi dip for the nigiri and sushi rolls. There were 10 slices (ok, only 9 for me!) of sushi and 3 pieces of nigri each. After eating my 3 pieces of nigiri and 4 slices of white sushi roll, I was finished eating - I was comfortable.
Needless to say, I love eating this way. I feel better and can't stand the thought of wolfing down a greasy hamburger, cheese covered tortillas or anything remotely fatty (animal fat, that is).
